Fall is the season of crisp mornings, cozy sweaters, and all things pumpkin. As the weather cools down, there’s nothing better than enjoying warm, nourishing meals and seasonal drinks. Below we compiled a full day of recipes that are inspired by fall flavors. Enjoy!
Breakfast: High Protein Pumpkin Overnight Oats
There’s no better way to start the day than with a bowl of high-protein and high-fiber overnight oats. This breakfast will keep you full and energized well into the day. Enjoy it cold or pop it in the microwave in the morning to eat it hot!
Pro tip: Prep a few jars ahead of time so you can grab one on busy mornings. Top with your favorite fall spices like cinnamon, nutmeg, or even a sprinkle of pumpkin seeds.
Lunch: Cozy Turkey Chili with Hidden Veggies
This recipe is filled with lean protein and sneaky veggies that blend right in for extra nutrients and color. The best part? It tastes even better the next day, making it ideal for meal prep.
Serve it with cornbread, crackers, or a sprinkle of cheddar cheese on top.
Dinner: Crockpot Beef Stew
This beef stew is the ultimate fall comfort food. Plus it features protein, veggies, and tons of flavor.
Since it's a crockpot meal, you can set it in the morning, and by dinner, you’ll have a delicious meal waiting for you. Pair it with warm bread or a side salad.
Snack: Protein Pumpkin Muffins
No fall day is complete without a sweet, pumpkin treat. These pumpkin muffins also include protein powder, making them a more nutrient dense alternative to your average muffin. Feel free to play around with different protein powder flavors, or mix-ins like chocolate chips or nuts.
Fall Drinks: Pumpkin Chai & Pumpkin Spice Latte
And of course… it wouldn’t be fall without a cozy drink in hand. Here are two delicious options to make at home:
Pumpkin Chai
⅔ cup chai (Tazo is a great brand)
¼ cup milk (or your favorite dairy-free option)
Pumpkin Cold Foam:
1 tbsp pumpkin purée
3 tbsp heavy whipping cream
2 tbsp milk
1 tbsp maple syrup
Whip the cold foam ingredients until frothy, pour over your warm chai, and sprinkle with cinnamon or pumpkin spice.
Brew a strong cup of coffee or espresso.
Warm 1 cup of milk with 2 tbsp pumpkin purée, 1 tbsp maple syrup, and a dash of pumpkin pie spice.
Froth the milk mixture, pour it over the coffee, and top with whipped cream and a sprinkle of cinnamon.
